Pork Lard Tortillas

Read the ingredients on a package of store bought tortillas and you'll never want to eat them again. Thankfully, homemade tortillas are easy and taste SO much better! They are also a great way to make a small amount of really good meat go a long way. Try them with pulled pork, or thinly sliced beef or chicken ... Fill with beans, some nice local grains like farrow and seasonal veggies for an affordable, delicious, healthy meal.

Ingredients
- 2c white flour
- 2c whole wheat flour
- 1tsp salt
- 2tsp baking powder
- 2 1/2 tbsp lard
- 1 1/2 cups warm water
Directions
Sift dry ingredients together into a large mixing bowl
Mix in the lard with your hands until the mixture is crumbly
Add warm water and mix with a large spoon until the dough is sticking together well enough to work with your hands then knead for a few minutes
Make about 18-20 little balls out of the dough
Preheat a cast iron pan over medium-high heat with plenty of lard.
Roll the little balls as thin as you can. If you don't have a rolling pin, a bottle works well.
Place rolled tortilla into the hot pan and cook until it bubbles and is golden brown on both sides. It takes about as long to roll out one ball as it takes one tortilla to cook so you can get into a good rhythm.
Use a tortilla warmer or wrap in aluminum foil to keep the tortillas warm & moist
