Easy Cabbage & Pork Casserole

I bought a 15lb cabbage at the farmers market last weekend which was exciting at the time but rather overwhelming as it sat on the kitchen table for a few days. It was intimidating so I called in the professionals. In my battered, duct-taped copy of "The Joy of Cooking" I found a whole section of cabbage recipes. I borrowed from a few of them to come up with this dish which turned out beautifully and was super easy to make:

Ingredients

  • 3c finely shredded cabbage
  • 1lb ground pork
  • 1 large onion, diced
  • 3 cloves garlic, diced
  • 3/4tsp salt
  • 1 cup plain yogurt (or milk, or cream)
  • 1/4tsp paprika
  • 1 cup bread crumbs (I just toss the ends from loaves of bread in the freezer then rip them up and put them in the coffee grinder when I need bread crumbs)
  • 1 cup grated cheese

Directions

  1. Place shredded cabbage in oven safe dish
  2. Fry up the ground pork, onions & garlic. Season with salt
  3. Spread pork mixture on top of the cabbage
  4. Mix paprika into yogurt (add a little water if it is too thick) and pour over cabbage & pork
  5. Sprinkle bread crumbs on top
  6. Bake at 325 degrees until crumbs are brown
  7. Sprinkle with grated cheese and return to oven to melt/brown cheese
  8. Serve & enjoy!

I highly recommend making a double batch so you have leftovers! Add any other vegetables you like. Works well with sausages too... just slice and pan fry and place on top of the veggies.
