Jowl bacon is made from the cheeks of the pig and is fattier than belly bacon. Slice it, cook and serve as you would regular bacon, or dice it and cook with anything that would benefit from bacon (basically everything!). Excellent with baked beans, brussels sprouts, kale, potatoes, pasta.... you name it! Be sure to save the drippings for frying.
